  • Three 4-5 inch pieces of day-old crusty baguette, cut in half horizontally (you will have 6 pieces of bread)
  • 3 eggs
  • ½ cup whole or 2% fat milk
  • 1-2 TBSP unsalted butter
  • Maple syrup, seasonal fresh fruit, and lightly sweetened whipped cream for serving on the side
  1. Add the eggs to a medium bowl. Whisk until smooth. Add the milk to the bowl and whisk to only combine with the eggs.
  2. Melt 1 tablespoon butter in a nonstick 12-inch skillet.
  3. Drop the baguette pieces one or two at a time in the bowl for about one minute to soak up some of the egg and milk mixture. Do not soak the breads for too long so they don’t get soggy.
  4. Brown the batter-soaked breads in the skillet on both sides over medium low heat. The breads will fluff up as they toast. Add another tablespoon of butter if needed. Keep the French toasts warm until all of them are done.
  5. Warm the maple syrup briefly in the microwave if you wish.
  6. Drizzle the French Toast with warm maple syrup and serve with seasonal fresh fruit and optional whipped cream.
