Hot summer days call for sweet cold watermelon. During these hot days our refrigerator is always stocked with watermelon. So recently I used some of it to make this Watermelon Smoothie. It is healthy, creamy and surprisingly delicious.
The other day after spending four long hours at my dentist’s office in the middle of the day, I came home with a numb jaw and starving. The first thing I saw in our refrigerator was the big container of the cut watermelon, courtesy of my husband.
There was also a tub of cottage cheese in there. My first thought was: Watermelon and cottage cheese smoothie! One small taste of the watermelon made me realize it was not as sweet as usual but it was juicy and flavorful.
In my search for something to sweeten up my smoothie I noticed a nice yellow banana on the kitchen counter. So this is how my Watermelon Smoothie was born! I like bananas but don’t like how the flavor overpowers everything else. This is not a banana smoothie and does not have a strong banana flavor and only gets a mild sweetness and nice thick texture from it. I have made this smoothie several times since, and love how creamy and tasty it is.
- 4 cups seedless watermelon chunks
- ½ ripe firm banana (for a sweeter tasting thicker smoothie add one whole banana)
- ½ cup cottage cheese
- Use a high power blender to blend watermelon chunks, ½ banana and ½ cup cottage cheese and blend until smooth.
- Pour into glass and enjoy with a straw or right out of the glass.
Not only is the smoothie refreshing, but also very delicious and satisfying. Especially perfect after being at the dentist. Yum!
